What’s something you’d love every couple to know about wedding cake decorating?
That it’s not easy! Many couples are surprised at the cost of a cake but they are very time consuming creations. Each week we prep, bake and wash approximately 120 tins of cake layers, whip 24kg of buttercream and then decorate up to 20 orders. It takes a whole team, from kitchen hand to decorator and delivery drivers.
What’s something couples are surprised to learn?
Most couples are surprised that we bake everything fresh. Our cakes are all decorated at the back end of the week and delivered just before the reception start time to ensure florals are kept in water as long as possible.
How do you create a great experience for your couples?
We offer a complimentary consult which includes a tasting of five of our most popular flavours. We don’t rush our meetings – they usually take between one and one and a half hours and are held mostly on Sundays for the convenience of our clients.
What excites you most about working in this space?
I simply love creating beautiful cakes. The number of people who are overwhelmed when they see and taste their cake makes all the hard work worthwhile.
What’s your best advice for couples organising their wedding cake?
1. Choose cake flavours you like. Most couples struggle to work out the flavour of their cake as they want to pick something everyone will like. Flavour is a personal thing, so you’ll never please everyone.
2. Have a basic idea of what you want your wedding cake to look like. It helps us formulate your ideas into a design you’ll love.
3. If you’re concerned about your cake not being eaten, consider serving it on platters in the middle of the table after your meal. That way you only need to account for about 70% of your guests, reducing your wastage. Another nice idea we’re seeing more regularly is couples cutting their cake as part of their signing after the ceremony and serving it with tea and coffee before the reception. It’s unique, ensures your cake is consumed and also saves on alcohol and canapé costs.
